PHUKET, Thailand (August 25, 2023) – Leading luxury resort Phuket Trisara has added a culinary star to its collection with the launch of a new Mediterranean-inspired dining concept.

Named Waew after the triangular island visible from the resort's private beach area, this new concept brings the taste of Southern Europe to the golden shores of the Andaman Ocean – both in terms of its cuisine and relaxed, informal character.

Just steps from the beach, Waew uses the finest ingredients sourced sustainably for dishes inspired by renowned light and vibrant coastal traditions of Southern Europe and the Levant.

Bold flavors are enhanced through cooking techniques ranging from light grilling to live-fire cooking in an expressive wooden oven.

A broad selection of wines, including natural and boutique vintages from well-known producers, along with the calm music carried by the waves of the Andaman Ocean, encourage long, leisurely lunches and refined dinners.

"We wanted to introduce a new full-course dining concept at Trisara," said Kittisak "Kitt" Pattamasae, General Manager of Montara Hospitality, owner of Trisara. "What could be fresher than a restaurant that embraces the healthy traditions of Mediterranean cuisine?"

"At Waew, guests can enjoy reimagined classics from the Mediterranean and other regions while observing the pristine beauty of our private beach and shimmering waters of the Andaman Ocean," he added.

Indeed, guests can savor dishes of indoor or al fresco dining while traveling through an epic gastronomic journey covering Portugal, France, Italy, Lebanon, Spain and Greece.

Examples of dishes include grilled sardines with Provence olive oil, lemon and parsley; Provencal Pissaladière tart with caramelized onions, anchovies, black olives and thyme; Burrata salad with cherry tomatoes, basil oil and lemon zest; and Australian marble lamb cutlets with chimichurri and flower cauliflower tabbouleh.

As expected from a place with real ocean connection, special attention is paid to fresh seafood. The best of Thailand's sea is featured in dishes such as Phuket lobster with green salad and burre au blanc sauce; sea bass cooked in a salt crust of seaweed and fennel; and fire-grilled octopus with romesco sauce.

Trisara has already established itself as a culinary force in Thailand thanks to the success of PRU, its signature restaurant which currently stands as the only Phuket establishment with a MICHELIN star.

The strong culinary vision of Montara Hospitality is also evident in the Tri Vananda project, a $182 million investment being developed within the green forests of northern Phuket where Jampa received a MICHELIN Green Star for zero-waste and plant-based cuisine.

Montara Hospitality’s concept of "Eat Well, Do Good" – emphasizing the sustainable use of local resources – is implemented across all its F&B venues. Thus, Waew uses ingredients sourced from local artisans and from the 16,000 sqm organic farm of Pru Jampa located within Tri Vananda's boundaries.
