Future Oven: The Most Interesting Innovation at IFA 2017 Trade Show

Modern Dialog Oven by Miele allows cooking meat and vegetables simultaneously while saving up to 70% of time

The international IFA trade show in Berlin amazed many cooks. For example, the company Miele introduced an oven that determines how to cook a dish as evenly as possible.

1. The Oven Determines When the Dish Is Ready

The M Chef technology used in the Dialog Oven by Miele uses electromagnetic waves of different frequencies depending on the type and texture of the product. The power level of these waves is much lower than in a microwave oven.

The antennas installed in the oven detect how much of the energy is actually used for cooking the dish. These electromagnetic waves penetrate deeper, providing even, volumetric food preparation.

What does it provide? At the IFA trade show, fish was placed in the oven inside an ice cube. The fish cooked while the ice around it did not melt.

2. All Dishes Are Cooked Simultaneously

Thanks to the Dialog Oven's ability to determine how much energy each ingredient needs for full readiness, all ingredients can be placed on the tray at once.

What does it provide? For example, lamb with vegetables and potato slices were cooked in 45 minutes. During this time, the meat was evenly cooked, vegetables became crispy, and potatoes were tender. The chef didn't need to intervene in the process. Even if salmon and puff pastry were placed together, they would cook simultaneously while retaining their unique aromas and flavors.

3. Cooking Takes Up to 70% Less Time

Two entirely new cooking programs were specially developed for the Dialog Oven: Gourmet Units and Intensity. The first defines how much energy is delivered to the food, equaling 1 kJ, and the second indicates how fast the food should absorb this energy. The recipe and cooking mode for traditional ovens must now be combined with M Chef.

How Does It Work? It is not necessary to wait for the end of the standard cooking program. Check the readiness of the dish around its midpoint. In most cases, that is enough time. For example, a marble pie will be ready in 37 minutes, au gratin potatoes in 35 minutes, and a pork knuckle in just 2 hours and 20 minutes.

4. Professionals Can Perform Culinary Experiments

A beginner in cooking or someone just starting to use the Dialog Oven can use the Gourmet Assistant program. This is an automatic adjustment mode for cooking dishes based on the quantity and type of ingredients. The Gourmet Pro mode is designed for professionals ready to experiment in the kitchen.

How Does It Work? Manually set all parameters, such as the cooking mode, Gourmet Units, Intensity, and cooking time.

5. Golden Crust Is Possible Even in Healthy Eating

Electromagnetic waves interact with food and preserve all juices and nutrients, but this method of cooking does not involve browning. For example, bread can be baked without a crust or meat that remains evenly pink from edge to center. Therefore, the M Chef technology also includes thermal and convection cooking in the 'top heat', 'bottom heat', or 'steam convection' modes.

What Does It Provide? Meat stays juicy, fish and vegetables retain their structure, and dough rises beautifully during baking.

6. The Oven Can Do More Than Just Baking

The Dialog Oven by Miele can perform some functions of a microwave oven, such as gently defrosting and automatically cooking products.

In addition, there is a pyrolytic cleaning function that allows easily wiping away burnt-on grease with a cloth.

What Else Are the Benefits? All levels of the oven are illuminated with BrilliantLight LED lighting. The Miele@mobile app allows setting recipe parameters directly from your smartphone.
